Feed Zone Portables - Sweet Potato Cakes
In the Biju Thomas and Allen Lim's brilliant athletes cook book they have come up with some great recipies for on the bike foods. These foods match the nutrition for great on the bike performance, great tasting and finally great recovery post workout.
Sweet Potato Cakes
2 medium sweet potatoes, peeled and cubed 2 eggs 2 tablespoons melted butter 2 tablespoons maple syrup 1/4 cup brown rice flour 1/2 teaspoon ground cinnamon Dash of salt 1 cup of cooked rice | Heat the oven to 400 degrees. Lightly coat a tart baking sheet with non stick cooking spray. Cook the cubed sweet potatoes in the microwave until fork tender, about 3 to 5 minutes. Place the sweet potatoes, eggs butter and maple syrup in a food processor and pulse until the mixture is smooth. Add the flour, cinnamon and salt to the mixture and pulse until fully incorprated. Finally add the rice, taking care not to overprocess - simply pulse to work the rice into the batter or stir it in by hand, The batter will be thick. Using a small measuring cup to fill each tart shape. Bake for 15 to 20 minutes, or until the centers are set.] The cooked ride gived these cakes a rich, custard-like texture. Top with your favorite chopped nuts and let them set for at least 10 to 15 minutes or in the fridge overnight. |
