Carrot and Kiwifruit Smoothie
A delicious combination – the sharpness of the kiwifruit helps to cut through the sweetness of the carrot juice. Carrots are a good source of beta-carotene, the plant form of vitamin A, which is crucial for good vision, especially at night This juice is therefore ideal for athletes who train or compete in low light conditions.
2 carrots, about 200g (7oz) in total
1 kiwifruit
Scrub the carrots. Cut the carrots and kiwifruit into even-sized pieces and juice. Pour into a glass and add a couple of ice cubes. Decorate with slices of kiwifruit, if liked.
Makes 250ml (8fl oz); Serves 1
Nutrition notes
This smoothie is an excellent source of vitamins C. They also provide good amounts of potassium and soluble fibre. Carrot and Kiwifruit juice is an excellent source of vitamins A, C, B1, and B6.
